Coconut-Crusted Cod with Mango Salsa

Hello World!


Today's recipe I actually tweaked a bit when I made it recently for dinner one night.
So instead of Coconut-Crusted Cod, I actually made Coconut-Crusted Mahi-Mahi, and Most-of-the-ingredients-we-have-on-hand-Mango Salsa.


Here's the original recipe, and then below it is how I tweaked it!


Coconut Crusted Cod:   
1/1/2 c. Coconut Flour
1/2 tsp. Ginger
1/4 tsp. Salt
2 C. Coconut Milk
1 C. Shredded Coconut flakes, unsweetened
1/2 lbs. Cod fillet, deboned and cut into 2-inch thick strips
2 Tbsp. Coconut Oil


Combine the coconut flour, ginger powder and salt on a plate. Place the coconut milk in one shallow bowl and the shredded coconut in another.
Dip the cod strips into the coconut milk, then the coconut flour mixture, back into the coconut milk, and finally back into the shredded coconut, paying special attention to coating the strips evenly.
Heat the coconut oil in a skillet on high heat. Sauté the cod strips about 5 minutes per side, depending on the thickness of the fish, or until the top and bottom are nice and browned and the fish is firm.
Serve topped with mango salsa.
Serves 4


Mango Salsa:
1 large mango, peeled and diced
1 avocado, diced
1/2 small red onion, diced
1 cucumber diced
1 bunch cilantro, chopped
2 cloves garlic, minced
1/2 tsp. salt
1 Tbsp. Olive oil
1 lime, juiced


Combine all of the ingredients in a bowl and mix to incorporate.
Serves 2 Cups


Coconut-Crusted Mahi-Mahi:
3 C. Coconut Flour
3 tsp. ground Ginger
1/2 tsp. Salt
2 cans Coconut Milk
2 C. Shredded unsweetened Coconut
10 pieces of frozen Mahi-Mahi
4 Tbsp. Coconut Oil


Coat a 9x13-inch pan with the Coconut Oil.
Combine flour, ginger, and salt on a plate. Place coconut milk in a shallow bowl and the shredded coconut in another.
Dip the pieces of Mahi-Mahi into the coconut milk, then the coconut flour mixture, back into the coconut milk, and finally back into the shredded coconut, paying special attention to coating the strips evenly.
Lay fish into oiled dish.
Preheat oven to 425, and bake for about 45 minutes, or until the fish is clear and no longer pink.
Serve with Mango Salsa
Serves 10


(My reasoning for using Mahi-Mahi instead of Cod was because we ended up not having any Cod on hand. And as for baking it instead of frying it, I had accidentally left the fish in the freezer instead of letting it thaw, and thus it would have taken much longer to fry, instead of baking it and having dinner ready on time.)


Most-of-the-ingredients-we-have-on-hand-Mango Salsa:
1 1/2-2 C. Frozen Mango
1 small Red Onion, diced
1 Cucumber, diced
1 bunch of Cilantro, chopped
2-3 cloves Garlic, minced
1 tsp. Salt
2 Tbsp. Olive Oil


Combine all of the ingredients in a bowl and mix to incorporate.
Serves 3 Cups


(My reasoning for not adding everything to the salsa was simply because the lime we had on hand had gone bad, and the avocados had been used up the previous week, or else I would have added those two ingredients.)




Conclusion:
Normally I'm not as forgetful or air headed when I make dinner, but obviously this night I was, so I had to tweak some things as you have noted. Dinner did taste delicious, but I personally was not overly fond of the mango salsa. ( It might have been more to my liking if I had, you know, actually made it the way it told me to...)
All in all, I was given many compliments and none of my siblings were picky about it so I'd rate it as a 4/5 star recipe.
