Cauliflower "Fried Rice"

Hello World!

Today I'm actually going to talk about a recipe that is not my favorite.
It's not that is tastes bad!
I just think that it isn't my favorite...

Cauliflower "Fried Rice"
1 head cauliflower, cored and roughly chopped
2 Tbsp. Oil
1 yellow onion, finely chopped
4 cloves garlic, minced
1 carrot, finely chopped
1 zucchini, finely chopped
1 C. mushrooms, finely chopped
1/4 tsp. Salt
1/2 tsp. ginger powder
1/2 tsp. turmeric
1 Tbsp. coconut aminos
1Tbsp. chopped chives

Process the cauliflower in a food processor for 10 seconds, or until it just barely forms rice-size granules; set aside. Heat the oil in the bottom of a large skillet or wok on medium-high heat. Add onion and cook for 5 minutes, stirring. Add garlic and cook until fragrant. Add carrot and zucchini and cook for another 5 minutes, stirring. Add cauliflower "rice," mushrooms, salt, ginger, turmeric, and coconut aminos, and cook 5-10 more minutes, stirring, until the veggies are all soft. Serve garnished with chives.

I think, personally, there are too many flavors fighting for attention in this recipe and my preference for eating my cauliflower seasoned would have to be with this recipe that I tried.
